My favorite holiday of the year is Thanksgiving.
There is no pressure to pretend you are something you are not. There are no expectations nor the disappointment of gift giving. Instead, today is a day that we purposefully reflect on all that we are grateful for in our lives. There will always be those who have more of what we want – beauty, money, body, success, friends. But it is on Thanksgiving that we reflect on what we DO have and appreciate that what we have now is all that we really need. When you are genuinely content with all that you have today and you sincerely give thanks for all the positives in your life today, all that you want will eventually appear tomorrow. So for today, take the time to write down 3 things that you are truly and sincerely grateful for. Try to make this a daily gratitude habit. You will find that your days are less stressed, less tiresome, your relationships become better, and you will walk around with a special glow. Being thankful for all the positives in your life makes for a happier and healthier outlook.
On Thanksgiving, you don’t HAVE to eat turkey. Don’t indulge if you don’t have to or want to. But if you are planning to indulge today make sure you are also incorporating some healthy foods. Here is a recipe for a quick and easy healthy salad, perfect for the winter season.
Hearts of Palm Artichoke Pomegranate salad
2 stalks of hearts of palm
5 artichoke hearts
1/2 cup pomegranate seeds
1/2 English cucumber
juice of fresh lemon
You can buy hearts of palm and artichoke already prepped in a jar or can. Just make sure to read the sodium content but usually they are just in water. Slice up hearts of palm and cucumber. You can also buy pre-seeded pomegranate. De-seeding a whole pomegranate can get messy if you don’t do it right. Squeeze fresh lemon juice. ENJOY! Happy Thanksgiving! :)
